Recipe(tried): Pork Roast, Wax Beans and Warmed Apple Pie Filling
Menus As Rhonda sid she would post one a week and I agreed so here is mine...
last night we had a pork roast. I had 1/2 one in freezer from a sale a while back. about 3 lbs pork loin roast.
I first wanted to thaw and precook on stove top (almost burned it!!)
>pork roast > large pan little water little lemon pepper little red wine bring to boil simmer maybe 1 hour (remember I'm thawing, prethaw would not need as long)fat side up.
remove from pan set aside and prepare curst
I used 1 roll of cressent rolls. i did not make into triangles, i left as rectangles placed 2 rectangles side by side in a shallow baking dish
place roast on top (fat side up)
3 tablespoons of grape jelly spread over roast
took 2 more rectangles (now they are all gone) and placed on top and bought around to pinch with bottom ones
place in thermometer and baked at 350 for maybe 1 1/2 hrs?? till golden and internal temp reached 175 then reduced heat to 175-200 wait for the brood to be home for dinner.
SLICE thin. breading kinda falls off but it can be redeemed.
served with
>wax beans the had been cooked in the liquid from my pork on top of stove, I made sure they cooked long enough because of the pork thing. to those I add a smidge of oreintal good seasons dry salad dressing mix. these were sooo good.
>apple pie filling warmed though with 1 tsp. brown sugar and 1/4 cup rolled oats and 1/4 cup water.
now I did not have anything green but it was yummy and we all enjoyed it.
