This was served (by Gina) as an appetizer at a picnic, but we serve it as a main course, with a green salad on the side. Good reheated or cold for lunch the next day.
3 1/2 Cups grated zucchini 1 box Jiffy Corn Muffin mix 6 eggs, beaten 1/2 Cup minced green onion 1 Tbsp each, oregano, parsley, season salt 1/2 cup parmesan 1/4 cup grated cheddar 1/3 cup vegetable oil (I add some hot sauce)
Mix everything together in a bowl. Spray a 9x13-inch glass pan. Bake at 325 for 35 to 40 minutes or till set. Bake at 350 in if using a metal pan.
