Baked Turkey Breast, Squash & Hominy Dish, Homemade Bread & Strawberry Nut Salad.
Squash and Hominy Dish: (Filling enough for an entree or fine as a vegetable side dish) Serves 6-8
2 lbs.zucchini or summer squash 1 large onion,chopped 4 Tbls.butter 1/2 c.water 2 1-lb.cans hominy,drained 2 jalapeno peppers,seeded & chopped 1 &1/2 c.sour cream 1 tsp.salt 1/2 lb.sharp cheddar cheese,grated crushed corn chips for topping
Combine squash,onion,butter & water in skillet & cook slowly till tender.
Add remaining ingredients,reserving corn chips & 1 cup of cheese.
Pour into greased 3 qt. casserole dish,top with remaining cheese & sprinkle with crushed corn at 325 degrees for 1 hour.
Strawberry Nut Salad (A great combination of tastes) Serves 12
2 pkgs.strawberry jello 1 c.boiling water 2 10 oz.pkgs.frozen strawberries,thawed 1 c.drained crushed pineapple 3 medium bananas,mashed 1 c.chopped pecans 1 pint sour cream
Mix jello in a large bowl with boiling water.Fold in strawberries,pineapple,bananas & nuts.
Pour half of this mixture into 9 by 13 inch baking dish or metal mold.Refigerate 1 hour.
Spread sour cream over top.Layer balance of mixture on top of sour cream & refigerate over night or for several hours.
