Paul's Shrimp Scampi
Uncooked shrimp- 8-10 pieces per person 2 large onions..slivered 4-5 cloves of garlic 2 sticks of butter 2 lemons Rice- about 2 cups 2 scallions chopped fine 12 oz. Mushrooms...fresh 1/2 cup white wine Old Bay seasoning pepper 2 cups flour 4 beaten eggs Clean and devein desired amount of shrimp, then butterfly and cook in boiling salted water which has been sprinkled with old bay seasoning for 2-3 minutes. drain and set aside.In separate pan, melt 1/2 stick butter,1 clove garlic chopped and 1/2 lemon squeezed in..toss in rind too...reserve for end of recipe
Add 1/2 stick butter to large frying pan and add 2-3 garlic cloves then fold in Onions which have been slivered...when translucent, add mushrooms, and simmer for 3-4 minutes..add rice.....then equal amount of water..cover and simmer til liquid is absorbed, and top with chopped scallions.
Dredge shrimp in Zip lock bag of Flour, old bay seasoning (half a palm full)and pepper 1/4 teaspoon. when coated...remove shrimp to plate and dip into egg mixture one at a time then back into flour and right into a frying pan with 1 stick butter and 2 garlic cloves... brown and turn...when second side is browned, pour the wine over top and squeeze 1/2 lemon over all.
Spoon Rice mixture to plate and top with circle of shrimp... cut remaining lemon into wedges in center of shrimp... pour on the melted lemon/garlic butter and enjoy the BEST SHRIMP SACAMPI you ever ate.
