Here is a great chicken recipe. We had it for dinner last night along with boiled corn and green beans with Aioli (garlic mayo)

Caramelized Onion Raspberry Barbecued Chicken
Recipe By : Houston Chronicle-8/5/98 Serving Size : 4 Preparation Time :0:00 Categories : Chicken
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups fresh or frozen raspberries 3/4 cup sugar -- divided 1/4 cup water 3 tablespoons canola oil -- divided 4 sweet onions -- cut in 1/4" slices 1/2 teaspoon chili powder 1/2 cup raspberry vinegar 4 boned and skinned chicken breast halves
Place berries, 1/2 cup sugar and water in a small saucepan. Bring to a simmer over med. heat. Cook until berries break down and sauce begins to thicken. Remove from heat, cool and puree in a blender or food processor.
Place a large pan over med-high heat and add 1 tbl. oil. When oil is bubbling hot, add onions. Cook until onions just begin to turn brown on the edges. Add remaining sugar to onions and continue cooking, stirring to prevent burning, until onions are golden brown. Add chili powder, 2 cups berry sauce, and vinegar to onions, reduce heat so that sauce is barely simmering. Cook 30 min. to allow flavors to develop. Preheat a gas or charcoal grill. When you can comfortable hold your hand 6" above the flame, baste chicken with remaining oil and place on the grill. Cook slowly, turning frequently. The chicken will cook fairly quickly, about 5 min. on each side. When chicken is almost cooked, baste again with berry sauce. Watch carefully because chicken will begin to burn if heat is too high. Remove from grill and serve with additional sauce for dipping.
