We often, like Jo, grill Polish sausage, kielbasa, etc. It is great. Here is a chowder recipe - has a lot of ingredients - but really doesn't take much time - I'll gve the microwave version - but you can easily do it top of stove also. And it freezes .... in case you want to save some for cooler weather! My husband won $1,500 for this recipe in a canned foods recipe contest back about 1990. Thus, all the cans!
FOUR BEAN 'N KIELBASA CHOWDER
1 onion, copped 1 clove garlic, minced 2 teaspoons olive oil 1 can EACH cut green beans, red kidney beans, garbanzos, black beans - drained (each can approximately 15 to 16 oz) 1 can (11 to 13 oz) chicken broth (preferably low sodium) 1 can (14-1/2 oz) Italian style stewed tomatoes 1 jar (8 oz) picante sauce - medium heat 1 can (6 oz) spicy hot flavor vegetable juice cocktail 1 can (4 oz) chopped green chiles 1/2 teaspoon EACH celery seed, black pepepr and basil 3 to 6 drops Louisiana hot pepper sauce 1 to 1-1/4 pounds kielbasa, sliced (or other favorite cooked sausage) 2 tablespoons chopped fresh parsley
Place onion, garlic and oil in 5 to 6 quart microsafe container. Microwave (HIGH-100%) 2 minutes. Stir in remaining ingredients EXCEPT kielbasa and parsley. Cover. Microwave (HIGH-100%) 8 to 12 minutes -- or until mixture boils; stir. Then microwave (MEDIUM-LOW-40%) 5 minutes longer; stir once or twice.
Remove 3 to 4 cups vegetables from the chowder and place in cntainer of food processor or electric blender; add about 3/4 cup liquid from chowder. Cover and process until almost smooth -- 3/4 to 1 minute. Return mixtre to container with rest of chowder and stir well. Taste; adjust seasonings if necessary.
Stir in kielbasa. Microwave (HIGH-100%), covered, 3 minuts; then at (MEDIUM-LOW-40%) FOR 5 MINUTes, stirring once. Stir in parsley. Serve.
Probaby serves about 8.
You can use your favorite canned beans - in case you don't like some of the 4 mentioned. But both the red and black beans and the green ones give the dish nice color.
This is great in cold weatherwith nice crusty bread.
