a nice veggie dish I do for my friend Helen.
4 large flat cap mushrooms..you know..the HUGE ones, stalks removed and set aside 1 bunch fresh coriander 1 small onion about 5 tbs grated sharp cheese olive oil
Chop up the coriander the onions the mushroom stalks and a clove of garlic all together. Mix in the grated cheese and stuff this into the mushroom caps. Drizzle with good olive oil. Place on a greased baking tray and bake in the oven on a medium heat until the mushrooms have softened. Add extra cheese and put back in the oven for 5 minutes. Heaven on a plate!
