Tonight for dinner we had a salad with black bean and corn relish and pico de gallo, chicken/cheese quesadillas, and Spanish seasoned yellow rice (from a ready to prepare package) and we will have strawberry shortcake later to cool things off. My question: does anyone have a recipe for the Spanish yellow rice so that I could make it myself? I know that there is saffron in it,also some peppers and onion. If you have a recipe for this...I thank you. When I search through recipes for Spanish rice I come up with the tomato sauced one with either bacon or ground beef.
