Yes, I know what you mean when everyone is gone and it's just DH and me...unfortunately there is no way for me to cut a casserole or a specific dish down to two. So I have to make the entire dish...for example, when I make a chicken casserole that needs a 8x13-inch pan, my Mom is usually over for the meal. We three eat, that leavesa 5 portions, she takes 2 leaving me with three. That three is lunch for me the next day and a meal for DH and me in 2 days. I don't like to eat leftovers right away. So I make another meal and then eat the leftovers the following day.
Lasagna freezes well, roasts turn into soups afterwards or open-faced sandwiches. But many, many of my dishes my Mom gets the leftovers or the next door neighbors get lucky and I send over a few portions.
That's why I try to stick to chicken breasts meals or pork chops then I add veggies to that or perhaps a veggie casserole, like a squash one. Believe me, it all gets eaten.
Thank God for the ever wonderful freezer in my laundry room too!!
