Thanks Dear Terrie! You are so kind! Of course I feel great for your words and appreciation.

You are absolutely right about my WHITE SANGR΁ RECIPE. It is great but in absolute honesty it is not mine. For about 6 years a wonderful couple lived at our compound, a gay couple, and both of them met at the America Culinary Institute in New York. Their apprenticeship was held at the Four Seasons and at the Tavern of the Green. Fernando was an absolute genius and such a devoted friend. He invented the concept Gourmet to Go and began it right from the kitchen of his townhouse. They also hosted teaching classes that were widely seek by professionals and aristocracy. About 5 years ago Fernando's father became sick at Fort Lauderdale and he returned together with his pardner to Florida. Sometimes I receive a letter or an e-mail from them and they are doing OK but never as well as in Puerto Rico, where food is a cult , a pastime and a general hobbie. I guess I did my apprenticeship with them, if it is possible to say that. Anyway, I lerned so much from them and I am grateful for their generosity and love of cooking.

The recipes I am including are both from Fernando and I use them always. I hope they will be to your liking.

WHITE SANGRIA FOR A PARTY:

1/2 galon unexpensive white chardonnay or Savignon Blanc
1 frozen guava concentrate
1 big pear nectar (can)
2 cups of Finlandia Vodka
1/2 cup of sugar
2 big Seven Ups.
Fruits, including white grapes, sliced apples and sliced pinneaple (use white fruits)

You can prepare the mix before the party, excluding the Seven Ups. You can add the seven ups before serving.

TROPICAL WHITE SANGRIA

2 oranges, peeled and sliced thin
1 bottle chilled white dry wine
1 12 ounce can mango nectar, chilled
1 mango in cubes
1 chilled 12 oz can of ginger ale
1 chilled bottle of unexpensive dry champagne

Add the Ginger Ale and the Champagne before serving.

The activity was a success. The Raspberry Sauce was greatly appreciated by my neighbors. I sincerely hope it will be to your liking.
