Have used these recipes for over 30 years! They are really great! Nice meal for company too. Any curry condiments can be served also. e.g. banana slices, coconut, mango slices, raisins etc.....

Dahl Soup
Easy Chicken Curry
Special Rice for Curries

DAHL SOUP -courtesy of a chef friend in British Guyana

2 1/2 cups dried split peas
2 Quarts boiling water
1/4 pound onions, chopped
6 garlic cloves, crushed
2 1/2 ounces vegetable oil
1/2 oz. Gera **
1/2 teaspoon curry powder
Hot Pepper Powder & Salt to taste
** NOTE-gera available at East Indian Specialty Store or fry cumin seed & roll with rolling pin to make a powder. (I do the latter)

Add peas to boiling water with the gera. Cook until peas are cooked. Takes a while. Can be cooled and saved at this point until ready to make soup or do all at once. Fry onion, garlic and curry powder in oil until onion is transparent but not brown. Add to peas. Add in the pepper and salt; cover and cook 10-15 minutes on low heat. (We add about 1 teaspoon of hot pepper as we like it hot.)

EASY CHICKEN CURRY -courtesy of Jean in India

1 Tablespoon oil (about)
2 medium onions, chopped
3 teaspoons curry powder
1 teaspoon paprika
1 teaspoon garlic powder
1/2 cup water
1 chicken, cut up (about 3 pounds)
1 Tomato, cut up
1 1/2 cups water

Brown the onions in the oil in a good sized pot and then add curry, paprika, garlic and the 1/2 cup of water. Brown until it sticks. Add the chicken pieces and brown them. Add the Tomato and the 1 1/2 cups of water and simmer, covered until chicken is done, (falling off bones) about 3/4 hour. Serve with Special Rice. I sometimes add a handful of raisins with the chicken.

SPECIAL RICE FOR CURRY - courtesy of Jean in India

2 teaspoons oil
1 onion, chopped
6 whole cloves
6 whole cardamoms
1 bay leaf
1 teaspoon turmeric
1 cup uncooked rice
little salt
1 1/2 cups water

Brown onion in the oil. Add the cloves, cardamoms and bay leaf. Stir well. Add the turmeric; stir and add in the rice frying until the rice sticks. Add the water and bring to a boil. Cover then turn off heat and leave for about 25 minutes.
Serve with side dishes of plain yogurt with finely chopped onion in it .
Nice with chapates or Naan bread too!
Usually too full for dessert but Gulab Jamin (Indian Dessert) is good. (found a recipe on net)
