Hey everyone... Last night we had... and I kid you NOT... the most unbelievable meatloaf I have ever had... I served it with twice cooked baked potatoes, cockpot baked beans, sauteed orange peppers with onions and zucchini and
then for dessert peach cobbler with home made almond whipped cream.

I have to tell you all... I have been collecting cookbook for a number of years... I must have almost 150 cook books... I read cookbooks probably like some people read novels... and I am always interested in finding that ONE recipe that is out of this world. Now I know that many of you don't know me personally... so you don't really know if I am the kind of person that over reacts or am inclined towards the extreme... but I just recieved a cookbook called "The Perfect Recipe" written by a woman who is one of the editors of a cooking magazine called Cook's Illustrated. Its kind of a hard core cooking magazine... and doesn't even have advertisments.

In this cookbook I found a recipe for meatloaf... now its one of those recipes that appears to be like every other recipe.... but now I know that proportions of everyday ingredients can produce one of the most incredible recipes I have ever tasted... I decided to try the recipe since I wanted to know if it would be something that I would want to go into my once a month cooking...the type of cooking where you freeze an entree to be quickly prepared later...

I was on call but really wanted to prepare this meatloaf... so I mixed up the ingredients.... but probably as you all know...just as I preheated the oven my phone rang... and I had to leave.... so I took the already premixed meatloaf... and placed it into a ziplock bag... and then froze it...

3 days later I came home and decided to pick up where I left off... Now I was a little concerned since the ingredients were not as fresh as when I first left!!! (I wonder why!!!!) but who cares if it is suppose to be "the perfect recipe"!!! I made the glaze... wrapped the meatloaf with the called for bacon...and then baked...

I all of a sudden realized that I had more food than 2 could possibly eat in a week.... so we decided we should invite some friends over . They have a new born 1 year old...and she is just now beginning to eat "real" food...but according to her mom... she won't eat just anything.... well we just had her "1st real food meal" but not only that...Mom and dad helped finish off an entire meat loaf... Which she decided needed to go into her own recipe file.

I usually prefer my meat to be cooked rare because I enjoy the juiciness...but I also know that it is really very dangerous... Well...this meat loaf is incredibly juicy.......even when it is well done.... NOW ISN'T THAT A FIRST!!!

Well I know that meat loaf isn't so special these days...but if any of you are interested in this recipe... let me know...and I'll post it... Happy cooking !!!
