Good Morning Julie, I,m sure the Flummery will be fine with frozen mangoes.I,ve masses of recs. for mangoes I love them If you would like a whole load,i,ve recs for cakes,salsa,s,desserts,ice-creams and even curries??? all using mangoes. here,s the one for SPICED MANGOES 1 litre white vinegar 250ml water 775ml sugar 8 whole cloves 1 peice green ginger,peeled 2 kg mango flesh(about 16 whole mangoes)cubed
Bring vinegar,sugar,water,cloves and ginger to the boil and allow to cool.Remove cloves and ginger.Place mango cubes into sterilized jars,pour over vinegar mixture until mangoes are covered and jars are full.Cover with lids and place in an ovenproof dish with 1cm boiling water.Place in oven at 200f and leave in oven for 35 mins,remove cool and store.Really yummy served with barbecued meats.
