Here's another mango recipe, one that I've enjoyed a couple times. It's a moist bread.
Mango Bread Yield: 2 loaves
2 cups flour, sifted 2 teaspoons ground cinnamon 2 teaspoons soda 1/2 teaspoon salt 1 1/4 cups sugar 2 large eggs 3/4 cup vegetable oil 2 1/2 cups mangos, chopped 1 teaspoon fresh lemon juice 1/2 cup raisins
Combine the flour, cinnamon, soda, salt, and sugar. Beat the eggs with the oil and add to the flour mixture. Blend in the mangoes, lemon juice and raisins.
Turn into 2 greased 8 x 4-inch loaf pans and bake at 350 degrees for 1 hour, or until wood pick inserted in the center comes out clean.

NOTES: Good flavor, rather moist bread. I used frozen mangoes from TJ's, thawed and drained. I cooked the loaves in the lower part of the oven for 40 miutes. Once cool, I dusted the tops with powdered sugar and sprinkled with cinnamon.
