We always have an abundance of eggplant and zucchini...we slice the veggies thickly...zucchini rounds and eggplant strips or rounds with the skin (depending on the variety and/or size)...and put it in a ziploc bag with Italian dressing for about an hour or so...then grill it...right on the grill...you can use foil...but I prefer it right on the grates...it is a delicious way to eat them! If you have leftovers, they are great wrapped in a flour tortilla...ENJOY!! |
