FRUIT SALSA WITH GINGER CHIPS
GINGER CHIPS: 1/2 cup sugar 1 tbsp ground ginger 1 tsp water 10 flour tortillas FRUIT SALSA: 1 ripe mango or 2 peaches 2 kiwi 3 strawberries 2 tbsp coconut 1 large can crushed pineapple, drained 4 tbsp brown sugar 1 tbsp candied ginger, chopped (look for this in baking the isle) 1 tsp ground ginger
GINGER CHIPS: Mix 1/2 cup sugar, 1 Tbsp ground ginger and 1 tsp water well. Spread over both sides of tortillas with a pastry brush.
Cut each tortilla into 6-8 triangles and place in a single layer on a greased cookie pan.
Bake at 450 approx 8 minutes or until chips start to lightly brown. Remove from oven, cool on pan 2 minutes and remove. Repeat with remaining tortillas.
FRUIT SALSA: Peel and chop fruit. Add remaining ingredients and mix well. Serve with Ginger Chips.
