Tonight, I wanted to roast some peppers on the BBQ (I like to roast them, chop them, and freeze to keep them handy to toss into sauces, soups, or on top of homemade pizza) and some eggplant, to make baba ganouj. I am doing the SBD, so I have to stick to veggies for munchies; it's easier if I have something ready to be ingested, waiting for me if I venture into the fridge!
Along with the veggies I was prepping for later use, I decided to try a recipe Betsy posted in a swap,
Pizzeria Chicken on the Grill (recipe). We all loved it! I made it with chopped up yellow peppers, red peppers, yellow zucchini (one of the first offerings from my garden, here in the Pacific Northwest), mushrooms, and parmesan cheese, and followed the method outlined in the recipe as per the sauce and subsequent prep.
As is our way, we all critiqued what we will do differently next time we make it. We will definitely try it with mozzarella cheese, and maybe some dried chili pepper.
Anyway, it was a real hit and we will be having it again very soon. Hope you all have a chance to try it, too.

p.s. I served it with an olive sourdough bread, warmed on the bread rack of the BBQ. And I cheated and had a piece...altho it is not on my diet, I have no regrets, it was worth it!!
