Crockpot Enchiladas
1 lb ground beef 1 cup chopped onion(you can leave it out or mince it real fine) 1/2 cup chopped green pepper 1 15 oz can black beans 1 10 oz can diced tomatos and green chilis(these are not hot) 1/3 cup water 1 tsp chili powder 1/2 tsp cumin 3 cups shredded cheddar cheese 6 tortillas salt and pepper
in skillet brown beef,onion, and peppers, drain. add next 8 ingredients, bring to a boil, cover and simmer 5 minutes layer in crockpot 3/4 beef mixture then one tortilla and then 1/2 cup cheese repeat layers, cover and cook 5-6 hours
