Since we have begun to eat healthier at our home, I have been accumulating some very tasty recipes from books at the library. It's been fun trying out new recipes and I am delighted that DH enjoys them, he has no other choice! This one cmes from a diabetic cookbok I found at Sam's and it has 500 recipes in it!
In the meantime, since our new diet is sugar-free and low in carbs I have begun to lose weight, yipee!!! The meals are not that bad and we are quite satisfied with the fruit desserts/parfaits instead of the usual cobblers and cakes that I used to serve. I guess I will now really have to learn how to use that Splenda for Baking in anticipation of the upcoming holidays.
Tonight's meal is quick and yummy! The salmon filet is broiled and served with a tasty sauce alongside steamed asparagus and new small potatoes. For dessert I am serving Cozy Shack Sugar-free Rice Pudding with a dusting of cinnamon.
Since the recipe serves 4 and there's only us two, I will keep the other salmons for tomorrow's lunch which will be a delicious Salmon salad (salmon cut into chunks over fresh Spring greens, with sliced cucumbers, tomatoes, sliced almonds, scallions, grated carrot and blueberries in a lemon-vinaigrette dressing).

BASIL-BUTTERED SALMON Source:
Better Homes and Gardens Our Best Diabetic Living RecipesMakes 4 servings
4 fresh salmon filets
1/2 tsp. salt-free lemon-pepper seasoning
2 Tbsp. butter, softened
1 tsp. snipped fresh lemon basil, regular basil or dill or 1/2 t. dried basil or dill, crushed
1 tsp. snipped fresh parsley or cilantro
1/4 tsp. finely shredded lemon or lime peel
1/4 tsp. minced garlic
Rinse fish, pat dry with paper towels. Sprinkle with lemon-pepper seasoning.
Place fish on a greased unheated rack of a broiler pan. Broil 4 inches from heat for 5 minutes. Carefully turn fish and broil for 3-7 minutes longer or until fish flakes easily when tested with a fork.
Meanwhile, in a small bowl, stir together butter, basil, parsley, garlic and lemon peel. heat in a small saucepan for about 5 minutes.
To serve, spoon 1 tsp. of sauce over each fillet. Use the rest of the sauce to put over the steamed asparagus and boiled red new potatoes.
Sprinkle fresh parmesan cheese over asparagus after plating.
