This is the closest I have come so far :) You need to cook it on a stone with your oven as hot as it goes.
3 1/2 Cups King Arthur All-Purpose Flour 1 1/3 Cups H2O (water) 1/2 Tsp IDY (yeast) 1/2 Tsp Kosher Salt
Using Kitchen-Aid mixer: Mix 2 cups flour and all the water and mix on 1 for 2 minutes Let sit for 20 minutes.
Mix the remaining flour and yeast in and mix for 1 minute on 1 Add salt and mix for 6 minutes on 1. Let rest for ten minutes then form 2 dough balls and place in Tupperware container
Throw in the fridge for 24 hours then pull an hour before cooking coat the ball in cornmeal and make your pie.
