This my favorite summer meal. Hope you like it, too. I make it to serve three.
Ingredients:
3 Chicken breasts
Olive oil
Basil (fresh if you can get it, but dried is ok)
salt
pepper
Red onion, cut into 1/4 inch slices
Tomatoe, cut into 1/4 inch slices
Frozen garlic bread, thawed and cut into thirds
3 slices mozzerella or provolone cheese
Brush breasts, onion slices and tomato slices with olive oil; then sprinkle with basil, salt and pepper. Place breasts in center of grill. Place onions and tomatoes off from center, but where they still get enough heat to cook. (The onions can be closer in then the tomatoes.) Open bread and put garlic side down on outside of grill, where it will toast, but not burn.
Cook until chicken is no longer pink in the middle. Assemble sandwiches.
Two bread halves, breast, tomato slices, onion slices and cheese. Enjoy.
