I don't have exact amounts but that's o.k. just use your judgement and it will turn out.
1/2 turkey breast or (equivelent)
1 small can diced green chilis
2 large cans green chili enchilada sauce
8 oz monterrey jack cheese, shredded
16 corn tortillas

pull apart (almost shred):
cooked turkey meat ( I use one breast side of a 20 lb turkey)
add to turkey meat:
1 small can of chopped green chilis
1/2 of large can of green chili enchilada sauce (just enough to wet the turkey)
set aside.
shred 8 oz. monterrey jack cheese
spray two 8" glass baking pans with baking spray
pour enough enchilada sauce in the bottom of each pan to coat
tear up 4 small corn tortillas (into 4 pieces each) and lay in bottom of pan
spoon 1/4 of turkey mix into each pan
sprinkle with 1/4 of the cheese
pour 1/4 of big can green chili enchilada sauce over each pan
repeat layers one more time
bake 350 degrees 30 min or until hot
sprinkle with olives, serve with lettuce, tomato and sour cream
