Broiled Lobster Tails with Vermouth Butter
Melt desired amount of butter (real, not margarine) in a broiler pan. Put the lobster tails (with shells) meat side down in the pan and broil till desired doneness. Put lobster on hot plate to keep warm.
In same pan add one more spoonful of butter and some fresh thyme. Let it get really hot and stir in about 50ml white vermouth wine (Noilly Prat is best). Cook a few seconds, and serve with the lobster.
