BEEF IN CREAM SAUCE Recipe By : Joy Servings:6
4 pounds pot roast 2 Tablespoons shortening -- hot salt and pepper -- to taste 1/2 cup water SAUCE 1/2 cup butter -- melted 2 CUPS whipped cream -- not whipped 2 large garlic cloves -- minced 1/4 cup lemon juice 1 1/2 teaspoons salt 3/4 teaspoon pepper
Serving Ideas : Serve with noodles or rice if desired
BEEF: In dutch oven brown meat slowly in hot shortening. Season with salt & pepper. Add water, cover and simmer for 3 hours. Remove meat from kettle and allow to stand for 20 minutes, then slice thinly.
SAUCE: Heat butter in saucepan until it bubbles and browns slightly. Add cream, garlic, lemon juice, and salt & pepper. Cook over medium heat, about 3 minutes. Spoon half the sauce in a glass, heat proof 9x12 dish. Arrange meat slices, overlapping in sauce. Pour remaing sauce over the top. Refrigerate until ready to serve, then heat in a 350 oven until heated through, about 30 minutes. |
