Recipe(tried): Chicken For Supper last night - Chicken with Mushrooms and Baby Onions

Rice and plain green boiled vegs go well with this. I served steamed green beans with the rice last night and to finish off we had chocolate mousse.

CHICKEN WITH MUSHROOMS AND BABY ONIONS

For the good wife's chicken you will need:
1 large chicken cut into four portions (or two small chickens halved)
3 Tbsp butter
12 small pickling onions
6 rashers of rindless streaky bacon, chopped
1 Tbsp plain flour
1 punnet of small button mushrooms
1/2 cup chicken stock
1/2 cup white wine
Bouquet garni
Salt and freshly ground black pepper

Heat the butter in a frying pan and brown the chicken pieces. Remove and drain.

Add the onions and bacon and fry until onions start to soften.

Sprinkle flour in the pan and cook, while stirring for three minutes. Add mushrooms, stock, wine, bouquet garni, salt and pepper (one or more cloves of garlic, optional). Bring to the boil. Return chicken to the pan, cover and turn down to simmer, letting it idle away for about 40 minutes until the chicken is done. Remove and discard the bouquet garni.

Lift the chicken out of the pan and arrange on a heated dish. Pour the sauce over and serve.
