Glazed Chicken BBQ Kabobs
Boneless Chicken Breasts 1/2 Cup orange marmalade 2 tbs. honey 1/2 tsp. ground ginger 1/2 tsp. salt 1 clove garlic, minced 1/4 cup soy sauce 1 pkg. bacon ( 8oz0
cut each breast half into 5 pieces. Add all remaining ingredients except bacon: stir to coat well. Cook bacon just until limp in microwave. Cut each bacon piece in half. Wrap each chicken chunk with bacon. Thread onto skewers. Pour remaining marinade into saucepan. Bring to boil over high heat: boil gently 6 to 8 minutes until slightly thickened and reduced by half. Place skewers on grill rack above medium fire. Grill 12 to 15 minutes, turning and brushing with sauce.
My husband loves to crank up the heat at the end and make the bacon go slightly blackend and crunchy.
