Asparagus Surprise
This recipe can be cut in half. Grandma always serves this casserole at the lake when asparagus is in season.
2 lbs. ground beef 1 large onion, chopped 1 tsp. oregano salt, pepper, onion salt,and garlic salt to taste 2 cans mushroom soup 1/2 lb. cheddar cheese, grated, or more if you like it 2 1/2 lb. asparagus 2-3 lb. fresh potatoes, mashed
Brown beef and onion together. Add garlic and onion salts, oregano, salt and pepper.
Place ground beef mixture in large casserole dish. Add layer of asparagus. Sprinkle with 1/2 grated cheese. Spread undiluted soup over cheese. Place mashed potatoes over soup and sprinkle with remaining cheese.
Bake at 350 for 35 minutes. |
