That's wonderful that it was a hit, it sure is a tasty chicken!!

The chicken enchilada was a hit at our house...I did improvise, so I am going to post the changes.

I added 2 minced garlic to the onion saute.
I also added 1/2 chopped red bell pepper, I tossed in 1/4 t. cayenne pepper, for a little kick and only put in 1/2 t. cumin.

It was delicious!
