My congratulations on your wonderful recipes, sense of balance and absolute variety in your Menus. I always copy your recipes for future use and reference. I read a book by Doña Petrona which is a very old cuban book; also the book by Elizabeth Lambert Ortíz on Caribbean cooking and several new books of cuban cooking, including one by Mary Urrutia Randelman which is wonderful, looking for the genuine recipe of ROPA VIEJA. The old books included a pinch of nutmeg and a pinch of cinnammon. The new books did not include it. What is your recollection on the suject and if possible, do you recall your mother's preference?
