So sorry about the language...we did not think anyone, other than Spanish-speaking people would be interested in sour oranges. Americans, by and large, ignore sour oranges...here is the translation then for my Mom's dessert. Getting a recipe out of her and my aunts is like pulling teeth; they don't write anything down, it's a little bit of that and a pinch of this...
Sour Orange Dessert
8 sour oranges, peeled and quartered (save the juice for marinating pork and chicken) 1 1/2 c. sugar 3 cinnamon sticks
Scoop the inside of the oranges out leaving the white jacket. Put them all in a pot with water to barely cover. Change the water every 15 minutes in an hour time period. At then end, bring the water and the orange pieces to a slow boil with the sugar and cinnamon. Boil slowly till the surup thickens and the pieces area beautiful golden honey color. Can as usual.
These are eaten with a slab of cream cheese or any white cheese you like with crackers.
Spanish Chicken in Sour Orange Marinade
chicken pieces sour orange juice 2-3 minced garlic sprinkle of black pepper sprinkle of oregano sprinkle of cumin sprinkle of salt
Mix all marinade ingred. together and cover chicken pieces with it. Marinade for 4 hours or overnight.
When ready to cook, discard marinade, put 2 T. oil in skillet and brown the chicken pieces.
