Clam Chowder:
Dice 1/2 cup bacon and 1/2 cup onion (frozen bacon is easier to chop)
Brown bacon and onion together in large saucepan
Leave grease
Dice 3 potatoes, 3 stalks celery and 2 shredded carrots
Add diced vegetables and 2 cups water (or to cover) to bacon and onions
Simmer 20 minutes with liquid from 2 cans chopped clams
Right before serving add chopped clams and 1 pint half and half and 1/2 pint cream.
Thicken by using 2 tablespoons cornstarch and 1/2 cup water.
Salt and pepper to taste.
Add shredded cheddar cheese if desired. I do:)
