Tonight we will be dining on Lasagna Roll-Ups, Garlic Bread, Tossed Salad and Strawberry Shortcake.

Lasagna Roll-Ups
serves 8
6 uncooked lasagna noodles
6 uncooked dried spinach lasagna noodles
1 lb. ground chuck
1 large onion, chopped
1 large red bell pepper, chopped
3 cloves garlic, crushed
1 jar 28 oz. favorite spaghetti sauce
1 c. sliced mushrooms
1 container 15 oz. ricotta cheese
1 pkg. 10 oz. frozen chopped spinach, thawed and drained well
1 c. shredded mozzarella cheese
1/2 c. parmesan cheese
1 t. salt
1/4 t. black pepper
1/4 t. crushed red pepper flakes
Heta oven to 350
Cook noodles as directed on pkg. Drain, cover noodles with cold water. Cook ground beef til brown, drain, set aside.
Saute onion, pepper, mushrooms til limp. Add garlic and all seasonings. Mix well with beef and spaghetti sauce, pour into a rectangular baking dish.
Mix cheeses and spinach well. Drain noodles. Spread 3 T. of cheese mixture to edges of 1 noodle. Roll up, cut roll in 2 pieces. Place cut side down in beef mixture, Repeat with remaining noodles. Cover and bake 30 minutes til hot and bubbly.Insalata Verdi

sliced red and green peppers
cucumbers
parmesan cheese, to sprinkle on
1 tomato cut up
handful cut up olives
handful cubed mozzarella cheese
handful croutons
Oil and Vinegar Vinaigrette Dressing
