This is my favorite kind of pizza:
Tomato-Basil Pizza Prepared pizza crust, or you can make your own crust 2 teaspoons yellow cornmeal 2 teaspoons olive oil extra olive oil for crust 2 garlic cloves, minced 1 (14.5 ounce) can of diced tomatoes, undrained or - 2-3 medium fresh tomatoes, diced 1 small red onion diced 3/4 cup (3 ounces) shredded mozzarella cheese 1/4 cup thinly sliced fresh basil 1/4 cup (1 ounce) grated fresh Parmesan cheese 1. Place pizza crust on a pizza pan or stone sprinkled with cornmeal. 2. Preheat oven to 450 degrees 3. Heat 2 teaspoons olive oil in large nonstick skillet over medium-high heat. Add garlic, sautee 30 seconds. Add tomatoes, cook 5 minutes or until liquid almost evaporates. 4.Lightly coat crust with olive oil. Spread tomato mixture over dough, leaving a 1-inch border, & top with onion, mozzarella, basil, & parmesan. Bake at 450 degrees for 15 minutes or until golden.
