In a large pot-sprayed, place onions, peppers and carrots and chili powder, simmer for 20 minutes, then add tomatoes-pour in juice then crush the rest with your hands(very good therapy), simmer it for an hour, then add the beans. Serve with fresh diced red onion on top, sour cream, scallions and cheese. You can also make corn muffins...awesome Hope you like it, Suzanne
