yesterday I fixed a variation on Swiss Steak, baked it in an oven bag, easy & very tender & delicious.
Along with the Round Steak we had Cream Cheesey Mashed Potatoes, Corn, & a Tossed Green Salad with Trader Joes Lemon Ginger Sesame dressing....Brownies for dessert.

Cali's Oven Swiss Steak

3 lbs. round steak,trimmed of fat & cut into serving pieces
salt & pepper
1 finely chopped onion
1 finely chopped carrot
1/2 C finely chopped celery
3 cloves minced garlic
1 can Golden Mushroom soup
1 can stewed tomatoes
1 large oven cooking bag
1 Tbsp. flour
Open cooking bag & add flour, shake. Place bag in roasting pan, add pieces of round steak (which have been lightly salted & peppered)in a single layer. Spread chopped veggies over steak pieces. Pour soup & tomatoes over veggies. Close bag, cut 6 slits in top of bag. Bake at 325 degrees for 2 hrs & 15 minutes. Cut an X in top of bag & serve steak with vegetable sauce spooned over each piece.

CREAM CHEESEY MASHED POTATOES

6 lg Russet potatoes, peeled & quartered
4 oz. cream cheese
4 Tbsp. butter
milk, warmed
salt & ground white pepper to taste

In large saucepan, boil potatoes in salted water to coveruntil tender. Drain well. Mash, adding cream cheese, butter, warm milk & salt & white pepper to taste.Keep, covered, in warm oven until served.
