this one is quick to fix on busy days! I served it with steamed brocolli, biscuits, and Waldorf salad, a small scoop of ice cream & a brownie for dessert : )
Cheesy Chicken & Noodle Casserole 1 can cream of chicken soup 1/2 C mayonnaise 2 Tbsp. fresh lemon juice 2-3 C cooked chopped chicken 1 small onion, chopped 1/4 C red bell pepper, chopped 1 /4 C green bell pepper, chopped 1 C shredded Monterey Jack cheese, divided 1 C shredded sharp cheddar cheese, divided 12 oz egg noodles, cooked & drained
In a large bowl, combine soup, mayonase, and lemon juice. Add the chicken, onion, peppers, 1/2C monterey jack cheese and 1/2C cheddar cheese; mix well. Add noodles and toss to coat. Transfer to a greased 2-qt baking dish. Bake uncovered, at 350º for 30-35 min. Sprinkle with remaining cheeses. Bake 10 min longer or until vegetables are tender and cheese is melted. Yield: 6 servings
