Manicotti
For Shells: 4 eggs 1 c. water 1-1/2 c. flour pinch of salt Mix all ingredients together well with whisk.
Pour a large ladle full of mixture onto a lightly oiled 6 inch fry pan(non-stick is best). Rotate pan to spread out batter. Flip with a spatula when edges turn white and curl up. Stack on a paper towel. These can be frozen at this point and filled later. Should make 20-24 shells.
Filling: Large container ricotta cheese 2 eggs grated mozzarella salt parsley spoonful of sauce to color
Place a spoonful of mixture on edge of shell, roll it up, place seam side down in pan. Cover with sauce and sprinkle with mozzarella cheese. Bake at 375 for 35 minutes.
For Sauce:
I use 3 cans of crushed tomatoes, large can tomato paste, parsley, oregano, basil, garlic, onion, salt & pepper, a teaspoon of sugar, a teaspoon of baking soda, approx. 1 can full of water. Simmer and add meatballs and partially cooked hot sausage. Continue to simmer for at least 2 hours(the longer the better. Boy, I hope I got it all! Have fun! |
