Tonight we are having Pasta salad. I have leftover Cilantro-Jalapeno grilled chicken, with some of the marinade I reserved for dipping sauce. I cooked lemon-pepper pasta, tossed it with the reserved dipping sauce, added some letover corn kernals, a can of black beans (drained and rinsed), sliced green onion, chopped red bell pepper, chopped tomato, and a handful of shredded cheddar. It serving time, I'll tear up some romaine to put on each plate, top with the pasta and veggies, and crown it all with slices of the chicken. I'll serve it with warm flour tortillas. I'll let you know what the family thought of my concoction!
