When we were in California, several years ago, I had such fun going to the grocery stores. We had never even seen a Safeway Grocery Store before! The fruits and vegetables were so beautiful and so delicious.
I never bothered to look at the flour/cornmeal aisle!

The original recipe called for Jiffy Cornbread Mix, but I don't like Jiffy because it has a "sweet" taste. When we have cornbread, I want it to taste like cornbread. Jiffy Cornbread Mix tastes like cake to me.

I got the recipe for the broccoli cornbread recipe that I posted from SISTER SCHUBERT'S SECRET BREAD RECIPES. In her broccoli cornbread recipe, she doesn't add the shredded cheese, but I think that it makes the bread more delicious.

Sister Schubert has a tip for substituting plain cornmeal for self-rising cornmeal. For each cup of self rising cornmeal called for, substitute 1 cup plain cornmeal combined with 1 1/2 tsps. baking powder and 1/2 tsp. salt.
