Good Morning Everyone!

Yes, it is great to be back home...I spent a week with my daughter in WPB helping her with last minute plans for her upcoming reception and wedding. We had a wonderful week, met her future in-laws and family and had a swell time!

On the way back home I stopped at a dear aunt's home and she filled up my Jeep with so many wonderful plants that Mom and I are going to spend Sunday re-planting them all.

Tonight's dinner will be Pot Roast, Waldorf Salad and for dessert a warm Blueberry Cobbler with Vanilla Ice Cream. Yes, it's good to be back home!!

Sunday Pot Roast

servings: 8

1 4 lb. boneless chuck roast
1 T. olive oil
1 env. dry onion soup mix
2 c. beef broth (Superior Touch Brand)
3 fresh thyme sprigs
4 carrots, scraped and quartered
2 garlic cloves, crushed
3 parsnips, quartered
1 med. rutabaga, peeled and cut into chuncks
1/4 t. black pepper
Season roast with salt and pepper, brown in olive oil on all sides til nice and browned. Place raost in baking pan, add the garlic and rub all around, soup mix, broth and thyme sprigs.
Bake at 325 for 1 1/2 hours covered tightly. Toss together the vegetables, black pepper and olive oil and add to pan. Bake an additional 2 hours til tender. Keep covered when cooking.

Waldorf Salad

4 red apples, chopped with skin
1/2 c. finely chopped celery
1 c. golden raisins
1/2 c. chopped walnuts
1 c. mini marshmallows
Sauce:
3 T. Miracle Whip
2 t. lemon juice
1/4 c. whipping cream
1 T. sugar

Mix sauce and blend into mixture of apples, nuts, celery and raisins and marshmallows.
Refrigerate til ready to serve. Serve on a garnish of lettuce leaf on a salad plate.

Warm Blueberry Cobbler

serves 10

1 2/3 c. sugar, divided
1/2 c. softened butter
1 1/2 c. self-rising flour
1 1/2 t cinnamon, divided
3/4 c. half-and-half
4 c. fresh blueberries
1/2 c. melted butter
Beat 1 c. sugar and 1/2 c. softened butter til creamy. Add flour, 1/2 t. cinnamon and half-and-half. Beat til blended.
Stir together blueberries, 1/2 c. melted butter, 2/3 c. sugar and remaining cinnamon. Spread half of mixyute in bottom of greased 13x9 baking pan. Spoon flour mixture in mounds over berries. Spoon remaining berry mixture over the mounds. Bake 400 for 40 min. Serve warm with vanilla ice cream.
