1 lb. ground beef 1 lb. ground pork 2/3 cups oatmeal 1 cup cooked rice 1 tsp salt 1 tsp red pepper 1 egg well beaten 1/4 cup Italian dressing (I use a sprinkling of creole seasonings, instead) 1 tsp. prepared mustard 12 strips bacon 1 large onion, chopped 1 medium bell pepper, chopped 1/2 tsp. garlic, minced 1 small can of mushrooms drained.
Carmelize the onion, add the bell pepper, mushrooms, and garlic and saute until soft. Cool
Mix the first nine ingredients. Lay the bacon strips side by side on a sheet of foil. Spread the meat mixture over the bacon, layer the onion mix over the meat. Using the foil, roll up jelly roll style. Bake at 350 degrees for 1 1/2 hours. I start mine wiht the foil on and remove later after it is set to brown the bacon. This is not low fat, but I found it a good recipe. It was so large I froze half of mineand baked it later.
