Patsy's meatloaf recipe sounds good I'll try it sometime.
I make mine real simple because my hubby is a very "plain" eater.

About 1-1/2 to 2 lbs beef/veal/pork (about 1-2 beef and 1/4 each veal and pork) I get a my local market this way.
1 egg
1/2 - 1/3 cup seasoned breadcrumbs
1/2 med red onion diced small
1/2 Green pepper diced small (can be omitted)
Salt/Pepper to taste
Pinch of basil leaves
Pinch of oregano
Somtimes I add a small amount of ketchup to the mixif it seems dry.
Mix together well- shape and put in baking pan and bake at 350-375 degrees. I guess about 1 hour to hour and a quarter. (I like the top brown and the meatloaf fairly dry)

YOu can also put strips of bacon on top--but I'm not a real fan of this--alot of my friends do this and love it.

I have also added a package of onion soup mix instead of the raw onion- along with the breadcrumbs, egg and seasonings. It makes a tasty meatloaf also.I also use onion soup mix sometimes with the seasonings and breadcrumbs. It makes a tasty meatloaf also.
