I enjoy your many postings and thought I would share my undertaking for Monday night's dinner. We will have Honey Mustard Pork Scallopini, Cheesy Mashed Potatoes, Kansas City Cucumbers, Green Bean Tomato Salad, and Pear Custard Squares. A number of these recipes come from Taste of Home. I have prepared everything today. Tomorrow when I return from work, I will only have to pop the potatoes in the oven and cook the pork. Many thanks to those of you who regularly post your menus. I love reading them and sometimes even try the recipes!
Honey Mustard Pork Scaloppini
4 thin cut boneless pork chops 2 Tb honey 2 Tb spicy mustard ¼ cup fine dry bread crumbs ¼ cup finely crushed buttery crackers 2 Tb butter
Pound pork chops to about 1/8-inch thickness between waxed paper. In a small bowl, combine honey and mustard; mix well. In a shallow dish, combine bread crumbs and cracker crumbs. With a pastry brush, generously coat both sides of pork with the honey-mustard sauce. Coat in crumbs. (I find it easier to coat one side, dip in crumbs, put crumb side down on waxed paper until finished will all chops, then repeat with other side.) In a heavy skillet, melt butter over med-high heat. Cook pork 4 minutes per side until crisp and lightly browned. This recipe from Taste of Home, but I got it from the creator's web page. Pear Custard Bars
½ cup butter or margarine, softened 1/3 cup sugar ¾ cup all-purpose flour ¼ tsp vanilla extract 2/3 cup chopped macadamia nuts (I used slivered almonds)
Filling/Topping: 1 pkg (8oz) cream cheese, softened ½ cup sugar 1 egg ½ tsp vanilla extract 1 can (15 ¼ oz) pear halves, drained ½ tsp sugar ½ tst cinnamon
In mixing bowl, cream butter and sugar. Beat in the flour and vanilla until combined. Stir in the nuts. Press into a greased 8-in sq baking dish. Bake at 350 degrees for 20 minutes or til lightly browned. Cool on a wire rack. Increase heat to 375 degrees. In a mixing bowl, beat cream cheese until smooth. Add sugar, egg and vanilla; mix until combined. Pour over crust. Cut pears into 1/8 in. slices; arrange in a single layer over filling. Combine sugar and cinnamon; sprinkle over pears. Bake at 375 degrees for 28-30 minutes (center will be soft set and will become firmer upon cooling). Cool on a wire rack for 45 minutes. Cover & refrigerate for at least 2 hours before cutting. Store in refrigerator. Yield: 16 bars From Taste of Home August/September issue
