This recipe is from Steph's Country Kitchen Goodness as is the Pork recipe. Cheesy Mashed Potatoes
5 medium potatoes, peeled & quartered 1 pkg (3 oz) cream cheese ½ cup sour cream ¼ cup green onions, including tops, minced 2 Tb butter, melted ½ tsp salt ¼ tsp garlic powder 1/8 tsp pepper 1 Tb butter Paprika
Cook potatoes in boiling water until tender; drain. Mash Stir in cream cheese, sour cream, onions, melted butter, salt, garlic powder and pepper. Place in 2-quart baking dish. Sprinkle with paprika and dot with butter. Bake, uncovered, at 375 degrees for 20 minutes.

Green Bean and Tomato Salad
2 cups fresh green beans, cooked & drained 1 8 oz. Pkg. Mozzarella cheese, cut into ½ in cubes ½ cup Zesty Italian dressing 6 plum tomatoes, sliced 1/3 cup chopped fresh basil 1/8 tsp. Pepper
Mix all ingredients together. Cover and refrigerate at least 1 hour.
(Since I am serving the next day, I will add the cheese cubes right before serving.)
