Last evening we had a cookout with co-workers and friends. They raved about the Roasted Pepper Relish. I thought I would share it with everyone to repay all the great ideas and recipes I have gotten. I got this recipe from a newspaper several years ago.
Roasted Pepper Relish
Olive oil 2 large sweet red peppers ( you can also use yellow and/or green for color) dice 1 c chopped onions 2 tsp chopped garlic 3 TBL cider vinegar 2 TBL sugar 1/4 tsp dry mustard 1/8 tsp cayenne pepper 1 teaspoon salt 1 1/2 TBL chopped parsley, preferably flat leaf
Roast peppers, peel and dice.
Heat oil in a large, heavy skillet over medium high heat. Add red peppers and saute 1-2 min. Add onions and garlic, cook and stir until onions are soft (about 2-3 min. more)
Combine vinegar and sugar in small bowl and stir to dissolve. Stir in pepper mixture along with the mustard, cayenne and salt. Mix well
Cook, stirring until all the liquid has evaporated, about 5 min. Remove from heat and cool. Stir in parsley before serving.
You can make this a day ahead. Cover and bring to room temperature before serving.
This is great on burgers, hotdogs even with steak or chicken. |
