Tonight's dinner will be Spinach & Feta Stuffed Shells, Romaine & Orange Tossed Salad and Amish-Style Baked Apples with Sugar-Cinnamon Glaze.

Spinach & Feta STuffed Shells
serves 6
2 10 oz. pkgs. frozen chopped spinach, thawed 10 oz. ricotta cheese 1 c. parmesan 3 1/2 oz. feta cheese 2 T. fresh chopped basil 3 garlic cloves, minced salt & pepper to taste 3 1/2 c. bottled favorite marinara sauce 32 jumbo shells
prehat oven to 350. Squeeze spinach dry. Transfer to a large bowl, add ricotta, 1/2 c. parmesan, all the feta, basil and garlic. Season with salt and pepper.
Spoon 1/2 c. marinara over bottom of 13x9 baking pan. Fill each shell and place in pan. Spoon remaining sauce over and sprinkle with remaining parmesan. Cover loosely with foil and bake 30 min.Romaine and Orange Tossed Salad1 head romaine lettuce, rinsed and spun dry 3 kiwifruit, peeled and sliced 1 (11 oz) can mandarin orange slices, drained 1 large red onion, sliced 1/2c. olive oil 1/4 c. lime juice 3 T. red wine vinegar 3 T. orange marmalade salt and fresh ground black pepper to taste croutons 1/3 c. halved pecans 3 oz. blue cheese, crumbled
Tear the lettuce into bite-size pieces and place in a salad bowl with the kiwifruit, range sections and onion. Combine the olive oil, lime juice, vinegar, marmalade, salt and pepper. Mix well in a glass jar. Toss the salad with the dressing just before serving. Top with croutons, nuts and blue cheese.Amish-Style Baked Apples with Cinnamon-Sugar Glaze

4 northern spy apples or cortlands 1 3/4 c. brown sugar scant 1/4 c. flour 2 T. lemon juice 3/4 c. water 2 T. butter ground cinnamon vanilla ice cream,
preheat oven to 375. Core and quarter apples do not peel. Place in a 3-quart buttered oven dish.
Combine brown sugar, flour and salt. Stir in lemon juice and water and pour over apples. Dot with butter and sprinkle with cinnamon. Bake for 1 hour Baste twice. Delicious over vanilla ice cream.
