I live in the Caribbean and I have always loved experimenting with flavors. I think that I have come up with a recipe for dinner biscuits or shortcakes or whatever you want to call it that will fit in well with a light lunch or dinner. I hope that you guys will try it and give me some feedback. Happy baking....

21/4 cups plain flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup sugar
1/2 teaspoon salt
3 oz butter/margarine chopped
11/4 cups coconut milk
4 oz salted cod fish
1 tablespoon fresh thyme, finely chopped
1 teaspoon garlic powder
1 teaspoon celery leaves finely chopped
1 teaspoon parsley leaves finely chopped
11/2 tesspoon marjoram finely chopped
1 teaspoon dried onion flakes
1 teaspoon chives

Preheat oven to 400F.

1. Place salted cod fish in a medium sized saucepan and cover with water. Cover pot and bring to a boil. Simmer until the fish begins to flake when touched with a fork. Remove from water, cool and flake with a fork.

2. Sift flour, salt, baking powder and baking soda together. Add sugar and mix well. Rub in butter until mixture resembles fine breadcrumbs.

3. Stir in coconut milk, cod fish and seasonings to form a soft sticky dough. if too sticky add a little more flour to mixture. Cover and refrigerate for 30 minutes.

4. Roll dough on floured surface until 3/4" thick. Cut dough into 3" rounds and place on well greased tray. Bake in hot oven for about 15 minutes or until browned.

Serve immediately.

NB: When these have cooled to room temperature they may be placed in freezer bags and frozen. When you are ready to re-use, thaw to room temperature and bake in hot oven until it is hot all through and regains it's texture.
