Hi Everyone!
A little late in posting today...was busy doing all household chores earlier.
Last night we had Sybil's Eggplant Parmesan and it is a keeper. It cut into beautiful squares and the taste was to die for! Thank you Sybil for sharing such a gem!!
Tonight we will be having Orange Pork Chops, Whipped Sweet Potatoes, Southern Green Beans and Chocolate Mousse.
The pork chops and mousse recipes come from my favorite cookbook, Some Like It South. Have you ever had a cookbook that ALL the recipes are to die for? Well, this is the one, I just adore this book and the ladies who put it together must have tested every one of them because they are the BEST. Every single recipe I have tried out of that book is like a gourmet one. I highly recommend this book to all passionate cooks out there.

Orange Pork Chops from Some Like It South Jr. League of Pensacola, FL
serves 4
4 pork chops, thick enough for stuffing 2 T. butter 1/3 c. chopped onion 1/2 c. chopped celery 2 cloves garlic minced (My addition) 1 1/2 c. bread cubes 2 T. chopped parsley 1 t. salt 1/2 t. grated orange peel 3 T. orange juice
Preheat oven to 375. Saute onion, garlic and celery in butter til tender. Add bread cubes and brown slightly. Remove from heat. Add parsley, salt orange peel and orange juice. Stir. Fill pockets in pork chops with stuffing. Put chops on a rack over a pan filled with 1/2 inch water. Cover pan and rack with foil and bake for 1 1/2 hours.
Glaze: 1/2 c. orange juice 1/4 c. light brown sugar 1/4 c. orange marmalade 2 T. vinegar Combine all ingredients and simmer for 15 min. Remove foil from chops, pour off water, brush chops with glaze and bake 30 min. more basting every 5-10 min.
Whipped Sweet Potatoes
serves 4
3 sweet potatoes 1/2 stick butter 1/4 c. brown sugar 1 t. cinnamon
Peel and boil sweet potatoes til tender. Mash or whip, add butter and rest of ingredients and whip til fluffy.Southern Green Beans
1 lb. fresh green beans, ends snapped off 2 large onion slices, chopped 1 garlic clove 2 bacon strips 2 T. veg. oil pepper salt 1-2 drops of hot sauce splash of red wine vinegar or balsamic vinegar
Cook bacon pieces with onion in a med. pot. After 3 min. add the oil and stir. Add seasonings and garlic clove. Add vinegar and beans, stir to coat. Cover and lower heat to med-low. Check after 5 min., stir, and lower heat to low. Cook for about 25 min or tender. You should have a delicious brown sauce coating the beans when they are ready.Chocolate Mousse from Some Like It South Jr. League of Pensacola, FL
serves 4
1 6 oz. package semi-sweet chocolate chips 2 eggs 3/4 c. milk, scalded 2 oz. rum 3 T. hot, strong coffee 8 oz. whipping cream, whipped 3 T. sugar chocolate shavings
Place first 5 ingredients in blender. Blend for 2 min. Pour into dessert cups and chill. Top with whipped cream sweetened with sugar and chocolate shavings on top.
