I started with the Copycat Red Lobster version of Crab Alfredo and changed the recipe to fit my taste. This recipe is the result and it's REALLY good. Serves 3 or 4 (depending on appetites, of course). I served with Caesar salad and KopyKat Red Lobster Cheese Biscuits.

CRAB AND SHRIMP ALFREDO

3/4 cup milk*
1 1/4 cup heavy cream*
1 stick unsalted butter
3 Tbs. cream cheese
1 cup Parmagganio Romano** Cheese, grated
1/4 cup Romano Cheese, grated
1 1/2 tsp. garlic powder
2 Tbs. fresh parsley, chopped
1/2 (to 1) tsp. crushed basil
1/8 tsp. red pepper flakes
4-6 large crab legs, cooked, meat removed
12 medium shrimp, cooked
1 to 2 cups sliced mushrooms (or as many as you want)

In a saucepan melt butter. When butter is melted, add the cream cheese. When the cream cheese is softened, add heavy cream and the grated cheeses. Add Garlic Powder, parsley, basil, red pepper flakes and stir well. Lightly boil over medium head for 15-20 minutes, stirring often, still sauce thickens. Season, to taste, with salt and pepper. Add the crab, shrimp and mushroom to sauce to heat.

Serve over freshly cooked fettuccine noodles and pass extra grated cheese.

* You can use 1 pint half-and half, but I think more cream is better.

**In the deli section generally. This is the brand name not the cheese flavor. It’s really hard to grate but worth it.
