I have a fantastic boneless, skinless, chicken recipe that was actually created by accident. I was trying to make (chicken curry) one night and grabbed the wrong spice! To my surprise, it turned out fantastic! Here is the following recipe for Chicken Paprika over rice.
Serves 4
4 boneless, skinless chicken breasts, rinsed and patted dry 2 Tbsp. paprika (any brand) 1 Tbsp. butter (not margarine) 1 medium onion diced 2 cloves of garlic, crushed 1/2 cup chicken stock 1 pint of sour cream or plain yogurt salt and pepper to taste
Melt butter in large pan over medium heat. Salt and pepper the chicken and saut`e in pan until golden on both sides. Remove chicken from pan and cover to keep warm. Turn burner down to med/low and saut`e onions and garlic until tranlucent. Add chicken stock and simmer for a minute or two. Gradually stir in sour cream or yogurt and mix well. Add paprika and stir until a creamy redish color apprears. Replace chicken breast and simmer for 5-7 more minutes. Serve over white rice or noodles.
